Would an acrylic carrier like this be a good travel carrier for the doves. If not what what would be an appropriate travel carrier?

Hi Louis, if you can't do a DNA test you could wait and see which one lays an egg ... It's another safe method to understand the sex 😉.

You could even try to understand the gender by the behavior (of course, that's not a safe method): usually males are noisier than females (they "sing" more and longer than females).
Males do bow and coo but sometimes even females do that.

I use rodent carriers (see the pic).
Even cat carriers are ok.
I have never used the type of carrier in the link, I think that my birds would get more agitated and nervous inside it because it's transparent...
Of course, I'm talking about my birds (because I know them!)...I can't give an opinion about your doves.
Btw, one of my birds really hates pet carriers, etc. I'm used to put him into a soft cat carrier (a bag) to prevent accidents.
